The perfect go-to if you want to eat less bread. Additional benefit: the crisps have a probiotic effect on the bowels and contain plenty of enzymes and nutrients.
sauerkraut – linseed crisps
2 cups raw sauerkraut
1 cup linseeds, soaked in water for two days (until they start sprouting)
1 cup dried tomatoes, soaked
1 onion, chopped
1/4 cup nettle seeds
2 tablespoons salad herbs, fresh or dried (herbal mix from the whole food store)
1/2 teaspoon salt
Purée all ingredients in a blender. With a spatula spread the mass thinly onto baking paper or oven/dehydrator foils. Dry them in the oven or dehydrator at 40°C for 8 hours. After 6 hours flip the nearly finished sheets over. Once completely dry break them into pieces of your preferred size.

I store the crisps in my “giraffe” container.
